Your puff pastry is so flaky and looks just perfect! I was also surprised at how the pastry still puffs up even with another pan on top of it... I really thought it was more fragile. However, my first attempt did not puff up very well, but I think I know where I went wrong: the pastry was quite soft and I should have left it in the fridge before baking. It made all the difference on my second attempt.
