Chocolate S'mores Mug Cake

Recently, someone on facebook mentioned that it was "National Chocolate Cake Day." I'd never heard of "National Chocolate Cake Day," but I was totally willing to celebrate it!

The problem was that I found this out kind of late in the afternoon. Meaning it was a bit late to get started with the process of baking a whole cake.

Not to be deterred, daddy, little miss and I decided to have some fun and make ourselves some microwave chocolate cakes.

Have you tried this yet? It's an individual-sized cake that you make right in a mug and "bake" in the microwave. They say that you can go from craving to dessert in five minutes. It took us a little longer, but not by much.

Start by measuring out the ingredients right into a mug.


Stir everything together, or have your side-kick do that for you.


We decided to turn our chocolate cakes into s'mores cakes by cutting up some marshmallows into little pieces and crumbling graham crackers into our mugs with the rest of our ingredients.


Then "bake" for two and a half minutes in the microwave.

See it? Yeah, tough to photograph through the microwave door. And don't mind the reflected mess. This was right after dinner and we hadn't cleaned up yet...

Once it's out of the microwave, it settles down a bit. Yes, the mug gets super messy.


The result is a decent cake. Not quite the real deal, but definitely worth the five minutes when that craving hits. Or when you need to celebrate "National Chocolate Cake Day" with little to no warning.


Be advised, though - this cake doesn't keep well, so do yourself a favor and, well, finish it all at once. I know, it's a hardship.

And stay tuned for another chocolate cake option, in case you want to go all out. And have more than five minutes.


Five-Minute Chocolate S'mores Mug Cake
(slightly adapted from instructables.com)

4 tablespoons flour
4 tablespoons sugar
2 tablespoons unsweetened cocoa
2 tablespoons whisked egg (it is less than a full egg... we whisked two eggs and split it between three mugs and had a little bit left over)
3 tablespoons milk
3 tablespoons oil
3 tablespoons chocolate chips
a splash of vanilla extract
a few mini marshmallows (a small handful at most)
half of a graham cracker (or one square), crumbled

Add all of the dry ingredients into a large mug and combine well with a fork.
Add in the egg and mix. The batter will be thick at this point.
Stir in the milk and oil, mixing well.
Add vanilla and stir.
Fold in chocolate chips, marshmallows and graham cracker pieces.
Microwave on full power for 2 1/2 - 4 minutes (depending on the power of your microwave). It will rise considerably as it cooks, but will deflate once it is done.
You can plate the mug, but we ate ours right out of the mugs.
