Mexican Tortilla Pizza

Did you celebrate Cinco De Mayo yesterday?

The C family had a super busy day, and we wound up running a bit late for dinner time, which meant that we didn't have time to make anything big or complicated.

But we certainly didn't let that stop us from having a Mexican-inspired meal with these quick, easy to prepare "pizzas."

All we needed were some tortillas (we used 10" fajita-style flour tortillas), some refried beans (half a can allowed us to generously cover all three tortillas) and some grated cheese (half sharp cheddar, half colby-jack).


Then daddy and I decided to add some diced tomatoes on top of ours before putting them in the oven. Little miss opted out of the tomatoes...


About 10 minutes in a 400 degree oven, and we had melty, ooey-gooey goodness!


Don't forget the condiments! A sprinkling of shredded lettuce and a dollop each of salsa and sour cream finished off the "pizzas" beautifully and deliciously.


We will definitely be making these again, and since they are so quick and easy, they very well may be lunches, too!

Mexican Style Tortilla Pizza
(our own spur of the moment method!)

Flour tortillas (10" tortillas, one per person worked for us)
Refried beans (a few tablespoons per tortilla)
Shredded cheese (cheddar, monteray jack, colby - whatever you have!) (and use as much or as little as you'd like - we used about 4-6 ounces for the three of us for some super cheesy goodness!)
Diced tomatoes (optional)
Toppings to taste - shredded lettuce, salsa, sour cream - you could add chili peppers if you want extra heat.
Keep in mind you can customize all of this.

Preheat oven to 400 degrees.
Lay tortillas flat on baking sheet (I covered my baking sheet in foil for easy clean up). Spread a few tablespoons of refried beans on each tortilla and top with melted cheese. Add toppings to your taste (diced tomatoes, peppers - whatever you'd like!).
Bake for 10-15 minutes, until cheese is melty and edges are crispy.
Garnish as desired with lettuce, salsa, sour cream... whatever you'd like!
